What a 6 A.M. Line for Tacos Says About Grand Junction
Fuzzy's Taco Shop held its grand opening Monday, September 14, at 2480 Highway 6 & 50 — and people started lining up before sunrise to get in. Ann Lasley, one of the first in line, set her alarm for 6 a.m. and arrived at 6:40 for a store that didn't open until 10:30. "We lived in Texas for 20 years and ate a lot of Fuzzy's," she said. The first 50 guests through the door won two free tacos a week for a year.
For location owner John Cassity, it was the payoff on three years of planning. "It's a very emotional day for myself because of how long we've been planning this and a lot of the challenges we've had in getting this open," he said. "To see the support from the community is just heartwarming beyond explanation." The new location brings 60 jobs to the area.
It's one restaurant opening, but it's not happening in isolation. Downtown, the old Junct'n Square Pizza space on North 7th is now Tiki Bird, a globally-inspired chicken spot from the couple behind Péche in Palisade. A few blocks over, Bistro 317 moved into the former Le Rouge space with a French-inspired menu, and The Roost brought Mediterranean and American comfort food to North 5th. That's a genuine wave of new dining rolling through Grand Junction this year, not a single headline.
I bring this up because it's easy to read a grand opening as a news item and miss what it actually tells you about a place. People don't set an alarm for 6 a.m. or hold a restaurant lease decision for three years unless they believe a town is worth betting on. Multiply that by four or five new kitchens opening within a few months of each other, and you're looking at something closer to a trend than a coincidence — a food scene that's actively filling in, not standing still.
For anyone touring homes here, that matters more than it might seem. A "close to restaurants" line on a listing sheet doesn't tell you whether the options nearby are actually growing or just holding steady. Right now, in Grand Junction, they're growing — from a national taco chain to a couple of independent spots run by people who already had a following in Palisade. That's the kind of quiet momentum worth noticing on your next visit, whether you end up ordering tacos, chicken, or steak frites.
